    The ingredients needed to make Veggie (or Quinoa) Rice:

    1. Get 1 1/4 cup uncooked white rice (or Quinoa)
    2. Make ready 1 3/4 cup water
    3. Get 1/2 cup chopped onion
    4. Prepare 1/2 cup chopped green bell pepper
    5. Make ready 1 cup zucchini squash, peeled and diced
    6. Prepare 1 cup chopped mushrooms
    7. Take 1 tbsp minced garlic
    8. Make ready 2 tbsp olive oil
    9. Prepare 1/2 cup grated parmesan cheese
    10. Make ready 1 tsp oregano (or italian seasoning mix)

    Add quinoa and veggies and cook until starting to soften and coated in. Add Quinoa, and cooked eggs to the mixture. Add in Oyster Sauce and mix. Soy sauce to taste if not salty, or optional sugar if sweetness is desired.

    3. Add in water and bring to a boil. Turn off heat and cover and let sit till most all water is absorbed. If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed.
    4. Stir in Parmesan cheese and extra seasoning if desired serve.
