    2. Pressure cook for 2 whistles & them Switch off the flame.
    3. Cool the potatoes & peel off the skin.Pick them with toothpick from all sides.
    4. Drain & wipe dry.Seasoned them with some salt & Kashmiri red chilli powder & toss it.
    5. Heat sufficient oil in a pan & deep fry the seasoned baby potatoes on medium heat till golden brown.Keep them aside.
    6. Dry roast the whole spices for about 2 mints to get a nice aroma & turnoff the flame then grind it to a fine powder.
    7. Remove the stems from the dry Kashmiri red chillies, deseeded them & soak them in hot water for 20 mints.Then grind the red chillies with water to get a fine paste.
    8. Take 400 gms curd in a bowl.To this add 1 tbsp of ground masala powder, 1/2 tsp dry ginger powder, all of the chilli paste.
    9. Mix everything together & whisk them to combine everything well to get a creamy & nice yogurt mixture.
    10. Take a kadai,add about 1/4 cup of oil,1/4 tsp of asafoetida,1/2 tsp turmeric powder, 1tsp Kashmiri red chilli powder to get a lovely colour.
    11. Add half a cup of water & salt to taste. Pour the yogurt mixture & bring it to a boil.
    12. While the oil separates add the fried potatoes.Cover & cook till the potatoes absorb gravy & the oil surfaces.
    13. Then turn off the flame.Garnish with garam masala powder & chopped coriander leaves.
    14. Serve the delicious hot kashmiri dum aloo with phulkas or nan.
