Make ready 1 small onion chopped

Steps to make Jollof Quinoa:
For the Obe Ata. With windows open, Blend all the ingredients and bring to a medium boil for 20 minutes or till sauce is slightly reduced. Cover and set aside.
Preheat oven to 230 degrees. In a dutch oven fry onions till soft. Add garlic and fry till fragrant. Next add tomato paste, turmeric, and smoked paprika and fry for 2 minutes
Open window and stir in Obe Ata and bring to a gentle simmer. Add thyme and the bay leaf and quinoa and stir in.
Add stock and stir. Cover and place in the oven for 25 minutes. Remove from oven and let it sit unopened for 15 minutes. Fluff rice/ quinoa. Season with salt if needed and serve
