    1. Take Dough
    2. Prepare 20 g fresh yeast (room temperature)
    3. Prepare 160 ml warm water
    4. Make ready 1 tbsp sugar

    7. Take 1 tbsp olive oil

    Instructions to make Focaccia:

    1. Add yeast into a bowl, then pour in warm water (not hot!) and stir to melt the yeast. Add 1 tbsp of sugar, 1 tbsp of flour and mix. Let stand for about 15 minutes.
    2. Sift the flour into a bowl, add a pinch of salt and all the yeast mixture. Combine with a spoon, pour olive oil and combine the ingredients into a soft ball. Knead the dough on the board for about 15 minutes until it is smooth, soft and flexible.
    3. Put the kneaded dough into a bowl, cover with a cloth and leave to rise on the kitchen counter in a warm place for about 1.5 hours. The dough will increase its volume about three times.
    4. Take out the risen dough from the bowl and knead for a while. Spread a mold about 20 x 30 cm in oil, put in the dough and knead it with your fingers spreading over the entire surface of the baking tray. Let stand for 1/2 hour.
    5. Cut the courgette and cheese into slices, and cherry tomatoes in halves. Arrange slices of cheese on the dough, cover with slices of zucchini and cherry tomatoes halves, season with salt and herbs and drizzle with oil. Let stand for 15 minutes. In the meantime, preheat the oven to 220C/430F. Bake for 15 minutes.
