    Ingredients

    The ingredients needed to make Chicken and Pineapple Curry:

    1. Make ready 3 medium granny smith apples
    2. Make ready 1 medium pineapple
    3. Take 2 thumb size pieces of ginger
    4. Take 1 bunch fresh coriander
    5. Get 4 clove garlic
    6. Prepare 1 tbsp olive oil
    7. Make ready 2 tbsp dessicated coconut
    8. Make ready 3 tbsp ground almond
    9. Take 1 tsp turmeric
    10. Make ready 1 tsp garam masala
    11. Make ready 1 tsp chili powder
    12. Make ready 1 tsp coriander seeds
    13. Make ready 1 tsp cumin seeds
    14. Prepare 1/2 cup apple juice
    15. Make ready 1 small onion
    16. Make ready 3 chicken breasts
    17. Take 75 ml red wine
    18. Take 500 ml coconut milk
    19. Get 1 knob of butter

    Finely slice pineapple and bell pepper and set aside. Pineapple curry is very popular in Sri lanka. Here is a recipe that uses chicken, pine apple, coconut milk and yogurt to make a super curry. Mix together the curry powder, chilli powder, lemon juice and yogurt.


    Instructions

    Instructions to make Chicken and Pineapple Curry:

    1. Chop 3 apples and put in a food processor. Process the apples and remove 2/3rds and put to one side. Chop half the fresh coriander, 2 cloves of garlic, 1 thumb size piece of root ginger and put into food processor with the 1/3 of apple.
    2. Add the turmeric, chili powder, garam masala, cumin seeds, coriander seeds, olive oil, apple juice, 2 tablespoons desiccated coconut and ground almond to the food processor and blend. Put to one side.
    3. Chop the remaining ginger and coriander, grate the onion and crush 2 cloves of garlic and put into a bowl.
    4. Chop the pineapple and chicken.
    5. Put a pan on low heat and add the butter until it melts.
    6. Add the bowl of ginger, onion, garlic and coriander to the pan and cook for 7-10mins.
    7. Add the chicken, remaining apple and remaining dedicated coconut and mix well.
    8. Add the paste from the food processor and mix well.
    9. Add coconut milk, red wine and simmer for 30-40mins.

    Melt the butter in a pan and fry the onion till. So yeah, it's a retro recipe, and I'm not sure where it comes from. Roasted duck red curry, Thai Traditional food. Chicken with pineapple and cahew nuts. Chicken pineapple curry(Sri Lankan and spicy).
