Recreating one of our favourite childhood canned food, 'Fried Dace with Salted Black Beans'. Use Dace or small fresh Sardine fish. Clean and remove heads.
A - Rub sardines with turmeric powder and chicken seasoning powder or salt. Heat up cooking oil in a pan and deep fry sardines until both sides turn crispy. Keep aside.
B - In a colander, rinse preserved salted black beans under running water. Keep aside.
C - Mix and combine ingredients in C. Put aside.
Cooking and preparing the dish - In a deep pan, Sauté D until FINELY JULIENNED ginger turn aromatic and light brown. Add B (salted black beans) and then C (sauce mixture). Stir to mix. Season with E and lastly add A (fried sardines). Taste and adjust seasonings accordingly. It shouldnt be too salty or too sweet. Stir and coat fried sardines with the sauce. Then Transfer everything to a slow cooker (or use pressure cooker).
Using a slow cooker, Cook on high for 2 hours and continue on low for 4 hours. Serve dish with warm rice.
